Made this recipe Saturday night. I could not find the recipe I used in past so I found this one on the internet. The picture on the Cooking with Kim page is actually of cucumbers that I used Thai peanut sauce to season, same as used on the chicken. Highly recommend serving cucumbers tossed in Thai peanut sauce.
Steve and I first had Satay in Penang in the early 80’s. I made it every now and then in the past but not for a long time, so this weekend I decided to bring it back to add a new twist to chicken breast.
I recommend, making night before and refrigerate over night.
Soaking the wooden skewers before barbequing is highly recommended for best results.
