This recipe is for one of my co-workers.
1 cup canola oil
2 1/2 cups sugar
2 cups unpeeled raw zucchini, grated (can grate in food processor)
2 teaspoon cinnamon (I would put at least 3 teaspoons)
1/4 teaspoon at most of salt
1 teaspoon baking soda
1 teaspoon baking powder
3 cups flour (recommend organic)
1 cup walnuts, chopped (optional– I rarely add nuts to mine)
Preheat oven to 350 degrees. Beat eggs until foamy. Slowly beat in oil and sugar. Add zucchini, cinnamon, salt, baking soda, baking powder and mix well. Blend in flour. Add walnuts if desired. Pour into well greased pans and bake for 45 minutes. In smaller pans for gifts start checking for doneness at 35 minutes. Cool 10 minutes before removing from pan.
